Chicken and Mango Stir-Fry

  • 2 tbsp fish sauce
  • 2 tbsp lemon juice
  • 1 ½ tsp corn-flour
  • 2 tsps brown sugar
  • 4 tsps vegetable oil
  • 500gm boneless chicken – cut into strips/cubes
  • 2 cloves garlic – minced
  • 1 tsp fresh ginger – grated
  • 2 fresh small red chilies – sliced
  • 4 cups broccoli florets
  • ¼ cup water
  • 1 medium sized mangoes
  • 1 bunch spring onions – chopped
  • ¼ cup chopped dhania
  • ¼ cup chopped fresh basil
  • ¼ cup chopped fresh mint



  1. Whisk together the fish sauce, lime juice, corn-flour and brown sugar in a small bowl and set aside.
  2. Place a wok over high heat and add 2 tsps of oil. Once the oil heats add the chicken and cook through for about 5 minutes. Remove the chicken from the work and set aside on a plate.
  3. Add the remaining oil to the wok and then add the ginger, chilies and garlic. Cook for a few seconds and then add the broccoli and water. Cook whilst stirring occasionally for 3 minutes and then add the mango and spring onion and allow to cook for about a minute and stir.
  4. Add the fish sauce mixture and stir in then return the chicken to the wok and stir. Allow the sauce to thicken and the chicken to heat through.
  5. Stir in the dhania, basil and mint, remove from heat and serve.
