Lemon Chicken Thighs

  • 8 bone-in chicken thighs
  • 1 tbsp vegetable oil
  • Salt
  • Black pepper
  • ½ of a preserved lemon – rind, minced fine
  • 1 fresh lemon – quartered



  1. Place a large frying pan over medium heat.
  2. Season the chicken with salt and pepper and place in the frying pan skin side down. Cook without moving for about 20 minutes until the skin is golden brown and crisp. Monitor reducing the heat if it seems too high.
  3. Turn the chicken thighs over to cook the other side and add the minced preserved lemon to the fat in the frying pan.
  4. Cook for another 15 – 20 minutes ensuring the chicken is cooked through to the bone.
  5. Remove the thighs from the pan and serve with the fat/lemon drippings and lemon wedges.
