Roasted Sweet Potato and Salsa Sandwich

500gms sweet potato

1 tsp. ground cumin
½ tsp. chile powder
2 ½ tbsp. lemon juice
1 bunch dhania

3 tomatoes – diced
3 red peppers – sliced thin

3 yellow peppers – sliced thin

2 chili peppers – diced

¼ cup plain yoghurt (or mala)

1 tbsp. vegetable oil
2 hamburger buns

Salt and pepper


Peel and slice the sweet potato. Slice to about 1.5cm thick.

Mince the dhania and separate 2 tbsp; remaining including soft stems should be about ½ cup – set this aside.

Set oven to medium hot.

Toss the sweet potato together with the oil, cumin, chili powder, salt and pepper and spread on a baking sheet. Roast in the oven turning until browned and cooked through. This will take 15 – 20 minutes.

Mix the 2tbsp lemon juice, tomatoes, peppers together to make a salsa and season with salt and pepper.

Mix the remaining lemon juice and yoghurt in a bowl.

Assemble by slicing the buns in half and layer the bottom half with sweet potatoes, salsa, sour cream, dhania and top with other half of the bun.
