Spicy Carrot Jam

  • 2 ½ cups grated carrots
  • ¼ cup fresh lemon juice
  • 2 tsps lemon zest
  • 1 ½ cups sugar
  • Salt – pinch of
  • 1 complete cinnamon stick
  • 8 cloves
  • ½ cup water


  1. To get lemon zest: Scrape the green skin from the lemon taking care not to scrape any of the white layer. Use a fine grater.
  2. Place the carrots, sugar, lemon juice and zest and salt in a bowl and mix together. Wrap the whole spices in cheese cloth and add this to the carrot mix. Cover and refrigerate for 12 hours or over-night in the fridge.
  3. Remove the carrots from the fridge and add them to a heavy based saucepan with the water and ginger. Bring the carrots to a boil over medium heat stirring until a syrup has formed and almost completely evaporated. This will take 20 – 30 minutes.
  4. Remove the spice bundle, let the jam cool to room temperature then transfer to a jar and refrigerate.
