Veggie Chilli

Ingredients

  • 1 red pepper – diced
  • 1 green pepper – diced
  • 1 red onion – diced
  • 500 gms tomatoes –peeled and diced
  • 1 kg cooked beans – you can mix different kinds if you like
  • 100gms tomato paste
  • 4 tbsps vegetable oil
  • 2 tbsps chili powder
  • 2 tsps ground cumin
  • 1 bunch dhania – chopped

Directions

  1. Heat the oil in a pan and add the onion, red and green peppers. Cook stirring occasionally until the vegetables soften.
  2. Stir in the spices and tomato paste and then add the tomatoes. Allow to cook for about 5 minutes then add 1 cup water. Allow to cook for a further 15 minutes or until the soup thickens to your desired consistency.
  3. Add the beans and dhania and allow the beans to heat through.
  4. Serve hot.
